Simple Salmon

I hate eating salmon in restraunts because generally speaking it's usually overcooked and dry.  Salmon doesn't have to be that way.  I prefer it done medium rare so that it has a nice pink inside.  This is the way I usually prepare it because it's fast and easy, but I do have some variations that I might add later.  

First I buy my salmon.  I love to get it from Costco, and truth be told, a lot of times I get the Steelhead Trout that looks and tastes like salmon instead because it's cheaper.  I grease my pan with coconut oil so the skin doesn't stick to the pan.  Eat the skin!  It's rich in omega 3, vitamin A and C, and calcium and iron.  I place the fish on the pan and top it with freshly chopped garlic, lemon juice, salt and pepper to taste, dill and paprika.   I've got it down to a science with the thickness of the cuts I get from Costco, my elevation at 5900 feet, and my maytag oven.  I set my oven for 400 degrees and bake it for 12 minutes.  Perfect!  You may need to adjust your temperature or length of time to your liking. 

Salmon or Steelhead Trout

You can change this up anyway you like.  You could add cayenne or maybe just a mesquite season with fresh lime juice and cilantro.  Again, the possibilities are endless.  Just don't over bake it!  It should me moist but pull apart easily with a fork.
